Monday Mystery: Solve the Riddle!

For today's Monday Mystery, you must solve a riddle!

Here are the clues:
I take off my jacket when the temperature's right
I frequently pop when my jacket's too tight!
At first I am yellow, even though I'm not scared
But then I turn white when my inside is bared.
Once out of my jacket, I do expand
Sometimes you will find me in the palm of your hand
What am I?
